Since the holidays are coming I wanted to be prepared for the sweets that would invariably be EVERY WHERE! [Click here to read my post on tips to get through the holidays without over indulging.] One of my favorite, favorite desserts is a crumble or cobbler, so I threw together this little delicious number to fulfill my crumble craving AND have a healthier option for when all the pies, brownies and cookies rolled out.
¾ cup raw almonds
2 tbls coconut flour
Sprinkle of sea salt (optional)
Dash of cinnamon
1 ½ tbls melted coconut oil
1 tsp vanilla
6-8 drops liquid stevia, to taste
1 tbls egg white
Toss frozen berries in tbls of coconut flour and evenly fill four small oven proof dishes
In a food processer, blend raw almonds and coconut flour. Put in a mixing bowl, add salt, cinnamon and mix. Add remaining ingredients. Top berry filled dishes with topping. Bake at 350 for 15-20 min until crust becomes crunchy. Let cool briefly before serving.
